Has anyone put aftermarket headers on a Chevy 4.3l v6? (I know just swap a 350 in but that’s not the point of the question.)

Nope, my Astro has the 4.3, but I've always looked at them as a utility motor and tried to keep it as plain and reliable as possible. I've seen a bunch available for the 4.3 and sure they work fine with minimal hassle. It's essentially the same as a 350 minus two cylinders.
