Like reading a good novel! Your stuff makes me want to rethink mine interior plan, which is just plane naked cedar strip for now.
If you want your front seat to swivel then you'll have a challenge. I have my seats swapped from Monte Carlo and grinded down stoppers to swivel 180 deg instead of 90 deg originally. That was the easy part. The hard part was that the front of the seat was hitting door pillar while turning, so I had to make my seat non adjustable forward/back, but adjustable sideways to clear door pillar. That was the hard part of passenger's seat. The driver's seat had an extra hard part... When turning, back rest of the seat was hitting steering wheel as well. Non adjustable forward/back didn't work this time coz to clear steering wheel it was too far back to reach my pedals:) So I had to weld double seat sliding brackets criss cross for it to be adjustable 4 ways and have the right height to sit. I'll have few pics in my thread in a day or so but first page has pics and info about passenger's seat.

If it's broken- I'll fix it! If it's not- I'll break it to figure it out how it works so I can fix it.

Thank you! I re-think this project all the time. I've put so much more time into planning the inside than I ever did on the rest.. The hard part is actually getting started lol.

My van had vintage swivels in it when I bought it. I'm going to keep those as they work great. The passenger side isn't a big issue, but since there is a stick shifter next to the driver's seat as well as the steering wheel, it is kind of a process to get it turned around. Move it a little, slide forward, spin it a little more, slide back, swivel a little more, lean the backrest forward... and so in. Worth it if you are parking or camping for an extended time though!

Also to note, I have ditched the idea if using the Saab Aero/Recaro seats I had mentioned before. There was too much wrong with them internally, and they are going to be a huge pain to get re-upholstered.. That, along with the size preventing them from being able to swivel, I have decided to use the leftover seats from my 1991 Toyota Cressida. They are in very good shape, and all power functions tested good the other night. They are a lot simpler design to upholster and should allow enough room to swivel..

Also hoping to pick up the supplies for the flooring, mini-bar, and headliner this week!

We are probably on the same page.. lol. I'm researching good 12 volt refrigerators. I found this unit on Amazon and I really like it, plus the dimensions are perfect for where I want it to go..

Me too! I don't like that price but idea is really cool, I'll consider having one.

It is a bit more expensive than some of the others I've seen, but supposedly this one is designed more like an actual fridge than a cooler and will get colder and use less power. It also has better than average reviews for what it is and isn't $1000 like an ARB..

My wife has been practicing for the upholstery work and I think we have settled on this design for the seats. We will be using the 1991 Toyota Cressida seats posted previously, and redoing them in this style:

This is just a test on scrap material, so do't mind the random colors and marks, but the seats will be black leather overall and the diamonds are going to be a dark Charcoal leather. All visible stitching will be blue as will be the piping around the perimeter. I'm pretty stoked for these!

Planning to work on the HVAC box tonight..
