Never seen seat covers this big......usually some people use a sheepskin type facing only

If you look for coupons you can get enough material to do anything you want for pretty cheap. Recovering walls works much better than dye. Recovering seats is usually pretty expensive. It's probably cheaper to find seats in the color you want and then sell the ones you have. You could probably break even that way. The fabric/vinyl paint at Auto Zone works fine on plastics and as long as it's not in a scratch prone area it will be fine. Could also restain the wood with a black stain and keep the woodgrain which might be cool.

I tried a local upholstery shop, but they weren't too helpful. I spent quite a bit of $$ at JoAnn's fabric shop for headliner and overhead console fabric, batting and foam.
What you're attempting can get to be expensive (not to mention hot -- white vinyl in Vegas?) with all the changes you have in mind. Finding other seats and selling yours may be your best value considering time spent and $ outlay. Just my 0.02.
I've had good luck with SEM paints. With the plastic, it needs to be ultra clean and an adhesive enhancer like Bulldog might be a good idea too.
