I've used stacked 2xs and a jack on the bottom of the partially closed door to help with the adjustments. Protect the paint under the door with a folded rag. Fine tuning done via varying my weight on the step.
Doors can be a pain in the arse but a little patience, a sharp pencil and thought makes it easier.

I can't see the shop charging more than an hour to adjust them but I don't have a book either.

If it were me pulling the striping.... Hmmm
If it's vinyl then a little heat like a hot blow drier or heat gun would be an asset. Once warmed then snag the corner and try to pull it back over itself working it up and down a little at a time while pulling it close to the surface, ie, folded.
If they're cracked or brittle with age then it'll be a little at a time, a small piece at a time.

They may be clear coated over though so a bit of sanding may be in order. If it's going to be repainted anyway try a little laquer thinner or xylene. We used xylene in fives when I was decaling semi trailers, seems to work best with the adheasives.

I've hung some doors that I really had to fight because of getting to the top hinge. Dealing with an opening that has no adjustment doesn't help much either.

I know the body shop that did the doors on my CAMARO a few years back had a .5" x 2" x 4' bar that had a notch in one end (the notch fit on the door striker pin, and a striker pin about 6" down the bar, hooked the notch on the pin, the pin in the latch, barely loosen the hinge bolts (very snug, but loosened) and lift untill lined up right....did that make sense?

here is one of the bars I found online...should not be too hard to make one from the picture.....good luck!

3M makes a stripe removal tool that you chuck in a drill. It's kinda like a cloth wheel. They wear out pretty quick, but should do the door.

Oh yea, forgot about the 3M tools angle. Durrr, what a marOOn I am! Thanks for reminding me, age must be setting in. lol

Here's 3M's site. Lotsa stuff there, I've spent hours personally.

http://solutions.3m.com/wps/portal/3M/en_US/Products/ProdServ/

Do a google like "3M decal removal tools".
There's a few step by steps there too.
