Protect the paint under the door with a folded rag. Fine tuning done via varying my weight on the step. Doors can be a pain in the arse but a little patience, a sharp pencil and thought makes it easier.
I can't see the shop charging more than an hour to adjust them but I don't have a book either.
If it were me pulling the striping.... Hmmm If it's vinyl then a little heat like a hot blow drier or heat gun would be an asset. Once warmed then snag the corner and try to pull it back over itself working it up and down a little at a time while pulling it close to the surface, ie, folded. If they're cracked or brittle with age then it'll be a little at a time, a small piece at a time.
They may be clear coated over though so a bit of sanding may be in order. If it's going to be repainted anyway try a little laquer thinner or xylene. We used xylene in fives when I was decaling semi trailers, seems to work best with the adheasives.
